Curried Coconut Chicken
Ingredients:
2
pounds boneless skinless chicken breasts, cut into 1/2-inch chunks

teaspoon salt and pepper, or to taste

1/2 tablespoons vegetable oil
2
tablespoons curry powder
1/2
onion, thinly sliced
2
cloves garlic, crushed
1
(14 ounce) can coconut milk
1
(14.5 ounce) can stewed, diced tomatoes
1
(8 ounce) can tomato sauce
3
tablespoons sugar
Directions:
- Season chicken pieces with salt and pepper.
- Heat oil and curry powder in a large skillet over medium-high heat for two minutes.
- Stir in onions and garlic, and cook 1 minute more.
- Add chicken, tossing lightly to coat with curry oil.
- Reduce heat to medium, and cook for 7 to 10 minutes, or until chicken is no longer pink in center and juices run clear.
- Pour coconut milk, tomatoes, tomato sauce, and sugar into the pan, and stir to combine.
- Cover and simmer, stirring occasionally, approximately 30 to 40 minutes.
Easy Pork Chops
Ingredients:
2 pork chops
1 apple, peeled, cored and sliced
2/3 cup apple juice or cider
1 tablespoon ghee
2 tablespoons plain yogurt
freshly ground pepper
Directions:
- Heat ghee in a frying pan over medium-high heat.
- Add pork chops, placing the apple slices around the edges.
- Cook the pork for about 1-2 minutes on each side to brown.
- Pour in apple juice, add ground pepper to taste and lower the heat.
- Cover and simmer until cooked, about 10 minutes.
- Stir in yogurt and bring back to simmer.
- Serve with additional apples, rice and/or veggies, using the sauce for flavor.
Lemon Pepper Chicken
Ingredients:
4 organic boneless chicken breasts
2 lemons, juiced and zested
4 tablespoons extra-virgin olive oil
coarse black pepper and coarse sea salt
Directions:
- Coat chicken in coarse black pepper and season lightly with salt.
- Combine lemon zest and juice with extra-virgin olive oil.
- Place sauté pan over medium-high heat, fill the pan until 1/4 inch deep with marinade.
- Cook chicken breasts 6-7 minutes on each side, adding marinade as needed to keep the chicken lightly covered while cooking. Make sure the chicken is cooked all the way through.
- Transfer to a serving platter and brush with the reserved marinade
